I constantly return to this dressing as one of my all-time favorites. I can throw ANYTHING in that salad and the dressing makes it all better. One of the best dressings I've ever made (and I make A LOT).

If you don't like spicy, use 1-2 TBSP chili powder for very mild or 1TBSP chipotle chili pepper for a little heat in place of the 1-2 chipotle chile peppers in adobo. Still has an amazing taste, just without the super spicy heat!
