Delicious! I don’t like cucumber so I substituted with celery. My husband read how good avocados are for you so this is the first recipe I’ve tried. He loved it.

My husband doesn't like raw tomatoes. What can I sub for them? I have black beans, chickpeas and carrots or a combination of some of these? Wondered your thoughts. TIA

Surprisingly easy and delicious! I had 3 ripe avocados (couldn't resist the sale on the bag of 4) and hey, you can only eat so much avocado toast. This is now my favorite way to use ripe avocadoes. So refreshing and tasty! The dressing is perfectly balanced -- I plan to make it again and use it in other salads as well.
