Whipped cream tends to deflate overnight so I'd recommend just making the pie a day ahead, once the whipped cream is added to the pie it's more stabilized.

Are you able to find pound cake? Another option would be to use a homemade angel food cake, vanilla cake or pound cake. I wouldn’t recommend the biscuits in this recipe.
