I cook a lot and don’t typically review a recipe, but this one floored me and I had to review. This was beyond amazing. I didn’t have zucchini on hand, but planning to pick some up at the farmers market this week to make again next week. I was out of cherry tomatoes but two slicing tomatoes chopped up got the job done. Thank you for sharing this recipe! It’s a new regular on the summer rotation for me!

I haven’t but I tried an olive oil/lemon variation of this and preferred the marinara.

I’m wondering if you tried dressing this in the olive oil and red wine vinegar that was used for your corn salad. (That is a delicious salad!)
