This is one of my two favorite salads, the other bring "Salad Nicoise". Although this is not the authentic "Brown Derby Cobb Salad" recipe, it's still nice - especially since I can't always find Chicory & Watercress here. The original recipe also uses Iceberg lettuce, but (IMO) BABY Romaine holds-up better, especially if you aren't serving the Salad immediately. The "Brown Derby Restaurant" originally served this salad with their 'House Old Fashioned French Dressing' (check out madaboutthe mouse.com). Shortly thereafter, a chef in a neighboring restaurant came up with a "Cobb Salad Dressing" which he served in his establishment with great success (the recipe is online). It's a delicious vinegarette, which speaks to those who's palates appreciate fine food. But of course, one can ultimately use whichever salad dressing they prefer.
