I use only KING ARTHUR flour after using other AP flours and have had perfect results. It could be the all purpose flour is to gummy and less water is the answer. If it’s bleached that may be another issue. I would suggest a flour type like KA unbleached or a bread flour.

My neighbor loved my bread and would like to know if gluten free flour will work with this recipe. I only use KA flour so I don’t know. What do you know about GF flour?

I’ve made this recipe a few times and love the flavor but each time it was a little gummy on the inside. Last time I tried slashing the top once and increasing the first baking time by 5 min but it was the same! I really want to get it right!! Help!! I use AP flour.
