In the last two years, this has become the most requested item by my adult children when they visit. They insist I cook extra so they can take home a lot of leftovers. Would there be any issue with making the marinade the night before and letting it sit in fridge overnight ?

I made this last minute and needed to make a few substitutes. I used Capitol City Mambo sauce in place of sriracha and mirin in place of the vinegar. This was amazing! Paired it with jasmine rice and chopped green onion ?????

That marinade is amazing! I did the half brown sugar half honey and the glaze it produced was beautiful and tasted wonderful. As an added bonus, I simmered down the remaining marinade into a concentrated sauce for serving with the chicken. The fresh ginger really popped. I paired it with Hawaiian Mac Salad and a green salad, great dinner and spouse approved.
