I did all of the above. BUT ...I used boneless skinless Chix thighs. Marinated chix (in fridge) for 1/2 hr. in McCormick lemon pepper spice (it's excellent) and garlic powder in a zip lock bag. Then added fresh lemon zest, fresh lemon juice, red pepper flakes and parsley. Baked in cast iron skillet with Italian dressing as my oil (Good Seasons). Turned out beautiful. Served over pasta so made a gravy from essence. White wine, splash of milk, Tbsp. mascarpone, and cream cheese to taste... tsp. of honey in case it got too bitter, and unsalted butter. Topped with Fresh Grated Parmigiano Reggiano. Turned out great! Thanks for the incentive!

It was quick and easy. My husband, and I really enjoyed this recipe, as well as my kids. I will be adding this to my monthly rotation.

Coating chicken in flour and pan frying is a common cooking technique for browned chicken, it sounds like the heat was up too high if it was burning.
