I’ve made this recipe so many times. I use feta cheese instead (just a preference). It’s an awesome thing to bring to a summer potluck and it is one that gets requested by my friends. Enjoy!

Great recipe! I made a few mods: used only 2 tbsp of siracha mayo and added a can of black beans. I also used Trader Joe's frozen roasted corn and it was delicious plus cut out a few of the first steps!

It likely won't brown the same with the excess moisture. Instead I'd try pan frying frozen corn kernels with butter, tossing just occasionally. Then mix in some of the finishes at the end.

I've made this twice now because I was craving it SO MUCH after the 1st time lol!!! It's delish & requires barely ANY ability in the kitchen-just takes a little time, and is well worth it-& is just as good on day 2 as it is right after u make it. I am gonna try what other reviewers mentioned next time & actually put it on my tacos or fajitas instead of just as a side dish! Oh, & I think I am gonna add bacon next time as well cuz, ya know, BACON!!!! Thanks for posting such great, easy to follow recipes girl, u save me so much energy, $, and time by ensuring things always turn out delicious!!

Amazing!! We ate it warm, then we ate leftovers cold. It is good either way. I also had it without the avocado. It is absolutely my new favorite!!!

So tasty one Tsp of mayo is perfect! we soread some on a soft tortilla and add mexican style ground beef it was DELICIOUS!!!

Yesterday we had a dinner of grilled chicken and summer salads. I served cold slaw, marinated tomatoes and this Mexican corn salad dish. It was such a hit! I made it ahead of time with everything but the avocado, which I added just before serving. I also used sweet green peppers instead of the jalapeño It was full of flavor - really delish! My sister begged me for the recipe and took the leftovers home. You know it’s a winner when that happens!

I have made this for BBQs twice now and it is such a hit!!! It is gone so fast, next time I decided I need to double it. Only things I changed was I added a lot more lime juice than stated in recipe and a can of black beans. SO good and is now a staple for me!
