I was looking for ways to cook lentils and came upon this recipe and I am so glad I did. It was fantastic! I love that it had the warm, Moroccan spices, but the ginger, tomato, and cilantro really brightened up the flavors which, for me, is necessary so it doesn’t taste one-note. I also loved the sweetness of the carrots and sweet potatoes to add the sweetness. Overall, this is an excellent recipe and I have already shared it with four family members. YUM!

I wanted a healthy vegetarian soup and made this recipe without any alterations. The cilantro is the perfect finish. This soup is so flavorful and healthy, I will certainly be making it again. Highly recommend!

I love the flavors in this soup and make a few batches every winter! I can't handle very much tomato so I leave the diced tomatoes out and add a bag of chopped kale instead. Delicious!

This soup is absolutely delicious. Everyone I’ve made it for agrees. But how ridiculous is it to list calories per serving in the nutritional information when you don’t define what a serving is… 1 cups? 2 cups? I’d really like to know. The information is useless without

I made this delicious soup today with just a couple of alterations. I used beef stock instead (only because that is what I had in the house) and a can of chickpeas instead of lentils (because we prefer chickpeas). This recipe is a keeper!
