I add some asparagus chopped into one inch pieces with the peppers and onions. Cooks well and adds a bit of green to the dish. (I also use Greek seasoning instead of Cajun cause I’m cooking for people who can’t do the spicy like they used to could).

Zucchini, squash, tomatoes, mushrooms, sliced carrots are all good options. About 15 - 20 minutes roasting time.

That should be just fine. As always just be sure to test the temperature for doneness.
