This is identical to my grandmothers pesto and is sooooo yummy. I’ve also roasted the garlic and used the infused oil. It kind of mellows out the garlic. One of my favorite dinners as a kid (and still today) was pesto served with cheese tortellini, chicken and English peas (sneak in those veggies). The pesto freezes really well if you blanch the basil first then cover the pesto with a layer of olive oil. It’s a fantastic recipe if you grow basil in the summer and have a ton to use up all at once.
