I made this tonight with eggplant (peeled and salted) and Romano cheese. It will become a regular dish in my household! I love that it's low carb but doesn't make you feel like something's missing or "off". It's a great way to have an Italian meal without meat (vegetarian) or the carbs from pasta.

Made for dinner last night using zucchini, onion, a few regular tomatoes and a few mushrooms. Everyone enjoyed the savory flavors! I followed the tip by one of the other commenters (and a treatment I do with eggplant) to salt the zucchini first and let sweat to reduce excess moisture) and I think that contributes to the texture not being too mushy

In an air fryer you'd likely have to work in batches but I would use the same temp, just not sure on time.

I made this today and it was delicious! I'm trying to eat healthier and this was quick, tasty and I would definitely make it again! I had it with sautéed Shrimp! Very good!

What a great dish! Made my dinner seem much more special. My family is not too big on garlic, so I just put in a 1/4 teaspoon of garlic powder into the oil mixture. It worked well.

I made this last night with a huge zucchini. My husband raved about it. I loved it. Whats not to love with parmesan cheese on it. Its healthy so I can eat it. Wonderful!
