This Mexican-ish looking meal, is far far from the real Mexican stuffed poblanos; I double-checked and you do mention it is Tex-Mex, so I'll refrain from other remarks.
Good thing I appreciated: You actually used poblanos and not bell pepper.
You recommend using cayene to make them hotter, here's my suggestion, stuff jalapeņos instead ;-)
