Baked Oatmeal is the perfect way to get your kids to eat oatmeal! They’ll think it’s a baked treat. It’s perfectly hearty and a great start to any morning. It also makes a great on the go breakfast.

Bring on those cold fall mornings, with this warm baked oatmeal recipe I’m totally ready for it!

It wasn’t until a few years ago that I first tried baked oatmeal and now I’m totally hooked!

Just like stovetop oatmeal, it’s so versatile, but the texture is so different.

So the people that don’t normally like the runny porridge-like oatmeal love this!

And I’m obsessed with this cinnamon, apple and cranberry, walnut combo.

Plus it’s sweetened with real maple syrup instead of sugar and uses coconut oil instead of butter so you can feel good about eating this for breakfast! Or lunch, or dinner. That’s cool too.?

Ingredients You’ll Need for This Recipe

  • Rolled oats
  • Baking powder
  • Salt
  • Cinnamon and nutmeg
  • Eggs
  • Milk
  • Coconut oil
  • Maple syrup
  • Vanilla
  • Apples
  • Walnuts
  • Dried cranberries

How to Make Apple Cinnamon Baked Oatmeal

  • Preheat oven to 325 degrees and grease baking dish.
  • Whisk together oats, baking powder, salt, cinnamon and nutmeg.
  • In a separate bowl whisk together eggs. Mix in milk, coconut oil, maple syrup and vanilla.
  • Add oat mixture to milk mixture along with apples, walnuts and about 2/3 of the cranberries and stir.
  • Pour into prepared baking dish. Sprinkle remaining 1/3 of the cranberries over the top.
  • Bake in preheated oven until set, about 45 minutes. Serve warm.

Tips for Baked Oatmeal

  • Use Old Fashioned rolled oats not quick oats.
  • Use coconut oil or melted butter.
  • Substitute maple syrup for honey or sugar.
  • Add walnuts and cranberries for texture.

Sweet, apple cinnamon swirled, baked oatmeal! This is a perfectly cozy breakfast for a cold fall or winter day! It's hearty and filling, and a great recipe for people that don't like porridge style oatmeal.

  • In a medium mixing bowl whisk together oats, baking powder, salt, cinnamon and nutmeg.
  • In a separate large mixing bowl whisk together eggs until well blended. Mix in milk, coconut oil, maple syrup and vanilla. 
  • Add oat mixture to milk mixture along with apples, walnuts and about 2/3 of the cranberries and stir well. 
  • Pour mixture into prepared baking dish. Sprinkle remaining 1/3 of the cranberries over the top. 
  • Bake in preheated oven until set, about 45 minutes. Serve warm.

    This has a nice flavor and bakes up to such a nice texture! A couple of changes I made after making it a few times for breakfast meal prep:

    instead of mixing the coconut oil with the wet ingredients mix with the dry ingredients after they’ve been mixed. this prevents the coconut oil from resolidifying

    there’s no real need to peel the apples unless you prefer! timesaver and retains the nutrients

    you get more maple flavor bang for your buck if you drizzle some on at the end and sweeten the recipe with 3 tablespoons of brown sugar instead. 6 tablespoons of maple syrup is 1/3 cup and so expensive and you really don’t get much maple flavor in the bake for as much as you’re using.

    I’ve loved using this recipe and it reheats so well! I just put a little butter on before putting it in the microwave.

    Can you use water in place of the milk? My grandson has dairy allergies and does not like any plant based milk. Thanks!

      It will lack flavor but water should work. Light canned coconut milk may be another to consider (still plant based but creamier than others).

    I’ve made your Amish Baked Oatmeal a few times now and it is always a big hit with my 2 year old and the adults in our family! My mom loved it so much she wants to make it for Christmas morning! I’m trying the apple cinnamon one today, it’s in the oven now and I’m sure it will be just as delicious. I used melted butter i place of coconut oil, brown sugar instead of maple syrup, chopped up some pecans in place of the walnuts and only had a few dried cranberries so they’re only on top. I also was worried the batter was a tad too liquid-y so I added a tablespoon each of chia seeds and ground flax seeds also for a little extra fiber. Writing it out, it looks like I changed a lot so my fingers are crossed it’s as delicious as the Amish one! Thank you for the awesome and easy to follow recipies!

    Just want to clarify, with the temperature requirement of the oven, do you mean in degrees fahrenheit or celsius?

    Great morning comfort food! I made this with 2 pears, and used butter instead of coconut oil. It is warm and creamy and delicious!

    Tried this recipe last week and loved it. I found it very filling and easy to grab in the mornings. I also enjoyed because it wasn’t overly sweet. My son also tried it and enjoyed it as well. I used raisins instead of the cranberries and I didn’t use the walnuts.
