Pink Detox Salad

Pink Detox Salad is a healthy, nutrient-rich salad with your favorite pink produce. Strawberries, watermelon, grapefruit, and pomegranate are nestled into leafy greens, topped with clusters of salty, soft cheese, and drizzled with a sweet and savory dressing. Make this for a fantastic lunch or winning side dish.
Who doesn’t love a bright, colorful, flavorful salad? I absolutely love salads and of course, I love them even more when they taste as good as this Pink Detox Salad does! This one will leave you asking “Can this be my lunch every day?”
Pink Detox Salad Ingredients
This detox salad recipe is layered with tender, crisp baby kale (I also added spinach and chard because I love that blend), fresh sweet strawberries and watermelon, tart grapefruit, juicy pomegranate arils (if you can find them this time of year if not just omit them this time around as I did), crunchy walnuts, tangy feta and it’s finished off with a sweet and creamy pomegranate Greek yogurt dressing.
You can definitely add more veggies here, especially if they contribute to the sweet flavors of the pink fruits. Carrots, avocado, red cabbage, cauliflower, and red onion are great additions. Green onions and fresh parsley are my favorites for garnish toppings.
Feel free to change up the crunchy additions, too. Almonds, sunflower seeds, and hemp seeds are great for adding more superfoods. If you’re keeping it vegan, lean on nuts, vegetables, and the antioxidants you get from fresh herbs and lemon juice. Chop fresh ginger and fresh cilantro for stronger flavors, or stick with olive oil and lemon juice for a more natural dressing.

Pink Detox Salad
Ingredients
Dressing
- 1/2 cup plain fat-free Greek yogurt
- 1/4 cup pomegranate juice
- 2 Tbsp apple cider vinegar
- 1/2 tsp lemon zest
- 1 tsp stevia (I substituted 2 Tbsp honey)
- 1/8 tsp salt
Salad
- 1 pink grapefruit, peeled, segmented and seeded
- 1/2 tsp stevia (I omitted this)
- 6 cups baby kale (I substituted a blend of spinach, baby kale and chard)
- 1 lb strawberries, hulled and sliced
- 2 cups (1-inch-cubed) seedless watermelon
- 1/2 cup pomegranate arils
- 1/4 cup walnuts, coarsely chopped
- 1/2 cup crumbled reduced-fat feta cheese
Instructions
- For the dressing: In a small mixing bowl stir together yogurt, pomegranate juice, vinegar, lemon zest, stevia or honey, and salt until well combined. Cover and chill until ready to serve.
- For the salad: Sprinkle grapefruit with stevia and set aside. Divide kale among four salad bowls.
- Top each serving with strawberries, watermelon, grapefruit, pomegranate arils, walnuts and feta cheese. Drizzle each salad with dressing.
