I have been sauteing green beans for years, but I put about 2 T of water and 1 T oil in the pan with the beans. I cover and cook them for 4-5 minutes and then remove the lid and let the water saute off as the beans finish. Once the water is gone, I add lemon juice and shallots at the end. I will have to try with water first and see which works best!

Fabulous! I've been sauteeing green beans for years, but with bacon added. I have friends who don't eat pork or beef, so I made this recipe and it was a huge hit with everybody, including my carnivore friends. It's going to be my go-to green bean recipe forever!! Thank you for this excellent dish.

Most often when I’ve measured it’s 3 cloves but they do definitely vary in size which is why I prefer to list a measurement. :) you can definitely decide the amount or even omit altogether if preferred. Happy cooking!

1 Tbsp minced garlic is equivalent to 6 cloves of garlic. 6 cloves in a recipe for 4? That's way too much to get me to love a dish. IME a slight hint of garlic is OK but 6 cloves is garlic overkill. So will the recipe work if I reduce the garlic to ½ tsp (1 clove)?
