Healthy Green Juice – Made with a variety of fresh greens including kale or spinach, cucumber, celery, lime and naturally sweetened with an apple or grapes. A great way to start the day!
Nutritious Green Juice
This green juice recipe is super versatile and is a mindful way to use up produce that is about to spoil so it’s not wasted.
You can even make a double batch so you have a juice for the next day without having to clean the juicer again (that’s always the only drawback).
When making green juice I usually always like to include the celery but everything else can be switched up.
Pick a leafy green such as kale, spinach or romaine lettuce, then toss in a cucumber or broccoli stalks, add a tart flavor from lime or lemon (to help mask the intensity of the leafy green), give it a flavor boost with ginger or mint, and sweeten it with a sweet juicy apple or green grapes.
It’s fun to try all the different varieties and helpful having the option of using up what you have on hand already.
Possible Variations
You can even add your own additions – things like green chard, collard greens, wheatgrass, parsley, grapefruit, or nutrition boosters such as green tea, spurlina, barely grass powder, or chlorella powder.
And try sweetening with other fruits such as pineapple, pear or a navel orange.
This is just a base recipe to get you started but the possibilities are endless!
Green Juice Recipe Ingredients
- Celery: Remove the leaves from the celery before juicing so the juice isn’t bitter.
- Cucumber or broccoli stalks: No need to peel the cucumber before juicing. If using broccoli stalks don’t include the florets as they have a much more pronounced flavor, save those for another use.
- Kale, spinach or romaine: Kale is the strongest flavored of the three, the other two will offer a more mild tasting juice.
- Apple or green grapes: I prefer to use a sweet apple as this is the only thing that adds much sweetness to the juice. Red grapes will work too but they’ll impart some color to the juice.
- Fresh ginger or mint: These add a nice boost of flavor to the juice. In a pinch you could try some dried ginger but remember a little goes a long ways.
- Lime or lemon: Cut around the pulp of the fruit to remove the peel and white pith, if you don’t do this first the juice will be bitter. For an easier option you can just squeeze the citrus in after juicing other ingredients.
Equipment Needed
You’ll need an electric juicer for this recipe. I own and have been happy with this Breville juicer.
It maybe doesn’t do quite as well with leafy greens as other higher priced alternatives but for the value I think it’s an overall great pick that has does an impressive job juicing fresh fruits and vegetables.

How long does it keep?
Freshly made green juice has not been pasteurized and should be consumed within 1 day of preparing.
Right after juicing transfer to an airtight container to reduce amount of oxygen its exposed to and store in the fridge.
Can I make green juice in a blender?
If you don’t have a juicer you can also try making green juice in a blender. To do so blend all ingredients together with 1/2 to 1 cup water or coconut water. Then strain solids through a fine sieve before consuming.
Is green juice good for you?
Green juice is a nutritious drink that may support boosted immunity, improved digestion, and reduce inflammation.
However keep in mind it is recommended to consume them in moderation as part of a balanced diet. They shouldn’t replace the recommended daily intake of fruits and vegetables as they are lacking in fiber, they can contain concentrated amounts of oxalate and they may raise blood sugar.

Green Juice
Ingredients
- 3 celery ribs, halved
- 1/2 medium cucumber or 6 oz. broccoli stalks (not florets)
- 2 large kale leaves, or 5 oz. baby spinach, or half head romaine lettuce
- 1 medium sweet apple (such as gala or honeycrisp) cut into chunks, or 6 oz green grapes
- 3/4-inch knob ginger or 1 small bunch mint
- 1/2 large lime or 1/2 small lemon, cut peel and white pith off*
Instructions
- Add prepared ingredients in batches to an electric juicer and process according to juicer manufactures directions.
- Serve right away or right away transfer to an airtight container and chill in fridge up to 1 day.
Notes
- *Instead of cutting peel from the citrus you can just squeeze it's juice in after juicing the other ingredients.
- You can also substitute leafy greens here with others such as green chard, collard greens, wheatgrass, or parsley.
- Optionally try adding nutritious boosters such as green tea, spurlina, barely grass powder, or chlorella powder.
- And try sweetening with other fruits such as pineapple, pear or a navel orange in place of apple or grapes.
- For an acidic replacement for lemon or lime try 1/4 of a grapefruit.
