Microwave Scrambled Eggs

Microwave Scrambled Eggs are ready to eat in just 2 minutes and they have the same classic flavor of stovetop scrambled eggs. They’re perfect for hectic mornings!
And my personal favorite way to eat them – in a loaded breakfast sandwich which I’ll share how to make!
Scrambled Microwave Eggs in a Mug
The other great thing about these is there’s less clean up. You cook the eggs in the same mug you mixed them in. No pan to clean just a single coffee mug.
Sometimes we don’t have 15 minutes to sit and cook perfect low and slow scrambled eggs on the stove top, we’ll save those for the weekends. This is real life and mornings can get crazy getting out the door.
And you can still customize these by finishing them off with your favorite toppings. You can never go wrong with some cheddar, hot sauce or crisp crumbled bacon right?
Safety Tips
Just be sure you never try to microwave an egg in it’s shell that can be dangerous! They explode because steam will try to escape from the shell. Also sunny side up eggs aren’t very safe for microwaving either, the yolk can burst if not punctured before cooking. Stick with scrambled eggs – mixing them first before cooking. No shell, no whole yolk, no problem.
And of course one more safety tip is be sure to use a microwave safe mug or dish. Not just here but any time you are using the microwave. If you are new to cooking it’s just one of those standard rules to remember.
Microwave Eggs Ingredients Needed:
You’ll only need 3 staple ingredients to make these (then add toppings if preferred):
- Eggs
- Milk – water could be substituted
- Salt and pepper
How to Microwave Scrambled Eggs:
- Grease a 10 – 12-oz. coffee mug.
- Add eggs and milk to mug, season with salt and pepper and stir with a fork until well blended (be sure to break yolk or it can burst).
- Microwave mixture on high for 40 seconds, then stir edges inward. In high wattage newer model microwave ovens you may find an initial 30 seconds is better so they don’t get too puffy.
- Microwave again for 20 seconds, then continue to cook as needed in 10 – 20 second increments or until eggs are just cooked through.
Do I Have to Use a Mug?
No. Most often I actually cook these in a microwave safe 2 cup glass pyrex dish (far right below) so I can put them in a bagel. Much like the bagel shops do it!
Can I Cook Just 1 Egg?
Yes. When I cook just one I start with an initial time of 25 seconds then cook in about 15 – 20 second intervals after that.
Can I Double This Recipe?
Yes but you’ll have to use a microwave safe bowl (not a mug) that can fit double the volume of the eggs. Cook in 30 second increments, stirring between each.
How Will I Know the Eggs Are Cooked?
The eggs should be just set barely set once fully cooked. If you’re unsure, give the mug a jiggle and see if eggs are runny. Just remember there will be a little carryover cooking from heat eggs retain once removed from the microwave so be careful not to overdo it or eggs can end up dry and tough.
Like Softer Set Denser Eggs?
Try a lower microwave power (about 60 – 70%) and cook in shorter increments.
Topping Ideas to Finish off Cooked Eggs with:
- Cooked crumbled bacon
- Diced cooked ham
- Chopped tomatoes
- Fresh herbs like chives or parsley
- Avocado slices
- Cheese (cheddar, swiss, montery jack cheese etc.) – shredded or sliced thin to melt
- Hot sauce
- Leftover roasted or sautéed vegetables (bell pepper, mushrooms etc.)
How do You Make a Breakfast Sandwich with Microwave Eggs?
- Cook two slices of bacon (I usually cook in the microwave to keep it simple here).
- Slice a savory bagel and toast. You can butter after toasting if preferred though I don’t.
- Cook eggs in the microwave as directed (in a dish that’s flat across the width of the dish on bottom).
- Invert cooked egg over one bagel half then top with shredded or thinly sliced cheddar.
- Layer on a couple of tomato slices then top with cooked bacon.
- Finish with a few avocado slices and top with the second half of the bagel. YUM!
- One of my favorite lazy breakfasts! You can lighten it up by cooking only 1 egg, skip bacon and serve on bagel thins.

- Add eggs and milk to mug, season with salt and pepper and stir with a fork until well blended (be sure to break yolk or it can burst).
- Microwave mixture on high for 40 seconds then stir edges inward. Microwave again for 20 seconds, stir again. Continue to microwave in 10 - 20 second intervals until just barely cooked through.
- Serve warm.
Notes
- Cook two slices of bacon (I usually cook in the microwave on a microwave safe plate with paper towels below and above bacon, for about 3 minutes or until cooked through).
- Slice a savory bagel and toast in toaster oven. You can butter after toasting if preferred though I don't.
- Meanwhile cook eggs in the microwave as directed (I use a 2 cup pyrex dish that's flat across the width of the dish on bottom).
- Invert cooked egg over one bagel half then immediately top with shredded or thinly sliced cheddar.
- Layer on a couple of tomato slices then top with cooked bacon.
- Finish with a few avocado slices and top with the second half of the bagel (if you'd like you can also throw some spinach in too).
- One of my favorite lazy breakfasts! You can lighten it up by cooking only 1 egg (reduce cook times listed slightly), skip bacon and serve on bagel thins.
